Bolognaise Sauce

500g mince
4 tomatoes
2 large onions, chopped
3 cloves of garlic
2 large carrots
2 sticks of celery
1 cup Chicken Stock
1 litre Napoli Sauce
1 bunch basil, shredded
1 red capsicum, diced
1 tsp mixed herbs
1 tsp oregano
50g Butter
1 tbsp oil

Brown the mince and onions together in butter. Remove excess fat if necessary. Add all other vegetables and herbs and allow to soften.

Add all other ingredients and simmer for at least 3/4 hour – the sauce should be reduced to a good consistency.
