Mousaka
2 tbsp oil
2 onions
4 tomatoes
1 tbsp tomato paste
½ tsp thyme
½ tsp corriander
salt and pepper to taste
Fry all ingredients. Add 125ml vegetable stock and simmer.
2 eggplants, sliced and grilled
700g potatoes, sliced and grilled
White sauce
Alternate layers – sauce, eggplant and potato, and white sauce. Sprinkle a little cheese on top. Bake at 180°
for about an hour (until the cheese has gratinated).
