Coconut Chicken Pie
Puff pastry
500g chicken breast,
1 large onion,
2 sticks celery,
2 carrots,
1 bunch spinach,
2 cups Chicken Stock,
Mixed or Italian herbs,
¼ bunch garlic,
Salt and pepper to taste,
50g Roux
400ml coconut milk
Butter a pie tin and line it with pastry. Set in the freezer until the mix is ready. Fry onions, garlic and chicken until tender. Add soy sauce, carrots and celery and soften. Add chicken stock and coconut milk and reduce the mixture by ¼. Add spinach and spices then stir in roux. Take off heat immediately and allow to cook before pouring into the pie tin and covering the lot with a stylishly crafted lid. Bake at 180 for about 20 min’s.
Tuna Pie Filling
2 tbsp butter
4 tbsp flour
300ml milk
1 tsp lemon rind
1 tsp lemon juice
200g tuna (canned)
½ cup corn
1 tomato
Melt butter, add flour and milk whilst beating. Boil 2-3 mins, simmer 2-3 mins whilst whisking. Add lemon, tuna, corn and tomato.
Beef and tomato Pies
500g mince
2 onions, diced
3 medium tomatoes, diced
1 carrot, diced
1 celery stick, diced
½ red capsicum
1 tsp mixed herbs
3 cloves garlic
1 cup Napoli
1 teaspoon Worcestershire sauce (or light soy)
Salt and pepper to taste
Brown onion and mince. Add vegetables and simmer for a few minutes. Add herbs and napoli and simmer for about an hour – make sure the mix is not too runny.
Allow to cool, add eggs and bring to the right consistancy with breadcrumbs.

Use muffin trays to construct pies, brush with milk.
Pie Dough
2.2kg sifted plain flour
8 ¼ cups shortening
3 cups cold water
2 tbsp salt
Place flour in a very large mixing bowl. Add shortening and cut it into flour until the crumbs are the size of peas.
Dissolve salt in the water and add the water to the flour mixture a small amount at a time mixing it just until the water is absorbed and the dough holds together.
Cover with plastic wrap and refrigerate for four hours.
Curry Pies
500g mince
2 onions, diced
1 carrot, diced
1 celery stick, diced
½ red capsicum
2 keffir lime leaves
3 cloves garlic
1 tsp chilli powder or garam masala
2 tsp tikka masala
Salt and pepper
Breadcrumbs
2 eggs
Brown onion and mince. Add vegetables and simmer for a few minutes. Add herbs and spices and simmer for about an hour.
Allow to cool, add eggs and bring to the right consistancy with breadcrumbs.

Vegetable Pies / Pasties
6 potatoes, mashed
1 300g tin tomatoes
200g mushrooms
1 carrot
1 celery stick
2 bay leaves
1 cup napoli
Butter
3 cloves garlic
Saute all vegetables in butter. Add all other ingredients and simmer to a thick sauce. Cool and remove bay leaves.

Chicken Pies
500g thigh or breast chicken
2 onions, diced
1 carrot, diced
1celery stick, diced
3 cloves garlic
200ml milk
Breadcrumbs
2 eggs
Milk

Saute chicken and onion in butter. Add other vegetables and herbs and simmer with milk. Cool, add egg, and bring to the right consistency with breadcrumbs.
Use muffin trays to construct pies. Brush with milk before baking.
Vegetarian Sausage Rolls
2 carrots, grated
3 potatoes, grated
2 sweet potatoes, grated
2 onions, diced
1 tsp soy
2 eggs
1 tsp garam masala
Butter
½ tsp mixed herbs
1 tsp parsley
4 cloves garlic, finely diced
Vegetable stock
Breadcrumbs
Salt and pepper to taste
Puff pastry
Milk
Squeeze moisture from grated vegetables, sautee all ingredients in butter until most of the moisture has steamed off.
Add breadcrumbs to form a nice consistency.
Assemble with pastry and brush with milk.
Sausage Rolls
1kg sausage mince
2 onions, diced
1 large carrot, grated
1 sweet potato, grated
1 small red capsicum, grated
1 tsp soy
1 tsp garam masala
Butter
½ tsp mixed herbs
1 tsp parsley
4 cloves garlic, finely diced
Vegetable stock
Breadcrumbs
Salt and pepper to taste
Puff pastry
Milk
Gently fry the onion and mince in butter until brown then allow to cool. Squeeze excess water out of the grated vegetables and combine all ingredients.
Add breadcrumbs until a nice consistency is reached.
Assemble with pastry, brush with milk.
