Basil Pesto

1 bunch basil
Pine nuts
Garlic cloves
Parmesan
Olive oil
Salt and pepper

Blend all. The pine nuts can be substituted for another type of nut, fruit or whatever really – experiment 😀

I have left the ratio’s out – add more oil if you like a more dippy pesto, cheese for cheesiness or nuts for crunchy goodness. Everything can be adjusted to taste but make sure you add the salt and pepper last to adjust for flavor.

Cabbage Relish

2 medium tomatoes
1/4 sm head green cabbage
1 lg onion
1 cup red wine vinegar
1/2 cup plus 2 tbsp sugar
1 ts Dijon mustard
3/4 tsp turmeric
1/4 tsp celery seeds
1/4 tsp ground cloves
1/4 tsp ground cinnamon

Finely chop first 3 ingredients and bring all ingredients to boil in heavy medium saucepan.

Add chopped vegetables. Reduce heat and simmer until vegetables are tender, about 15 minutes, stirring occasionally (mixture will be thin) Cool, cover and refrigerate until well chilled. (Can be prepared 5 days ahead.)

Drain before serving.
